Tasting Notes

Bright medium garnet.
Blackcurrant, blackberry, sarsaparilla root and fresh leather.
Black fruits framed by violets. Generous herbaciousness, bay laurel and earthy flavours supported by firm acidity and supple tannins.

Winemaking

13.50%
750ml
Fermentation method: Small open top fermenters. 100% whole berry. A mixture of plunging and pump-overs were used during fermentation. An average of 2-3 weeks total time on skins. Natural yeasts were used and once ferment was complete the wines were pressed to tank to settle overnight and then transferred to barrels to complete MLF. 18-month barrel maturation in French barriques, 30% new.
