Grenache was gently destemmed to a small, open-topped fermenter for a whole berry ferment to capture fruit purity and finesse. Plunged and pumped over three times daily. Pressed off skins to barrel for malolactic fermentation in larger (puncheons) format oak. Whole bunches of Shiraz were held for one week in carbonic maceration with 50% then destemmed for fermentation in small, opentopped fermenters. Whole bunch was footstomped twice daily and whole berry plunged and pumped over three times daily. Pressed to small format (barriques) for malolcatic fermentation and aging. Fermentation time: 12 days Skin contact: 1 week Barrel origin: France Barrel age: 20% new oak Time in barrel: 9 months MLF: Yes |
